 Cucumber dressing recipe

Even without the Honey Bees our vegetable garden is doing well.
We are starting to get lots of stuff ready to harvest.

I picked Cucumbers yesterday, and today I am making one of our favorite salad dressing.
I decided to post it so if you have cucumbers, and like the dressing on your salad you may like this recipe. We love it! Its also good with chips.

Cucumber Salad Dressing

6 or 7 long cucumbers washed with the ends removed.
1/2 pint sour cream
1 quart Hellmans Mayonnaise
1 pint Miracle whip
1 teaspoon garlic salt
3/4 teaspoon onion salt
1/4 teaspoon pepper

grind cucumbers with the peel on. This is the most important part. Get all of the juice out of the ground cucumbers, also if you have cucumbers with large seeds I remove them.
I put mine in a kitchen towel and wring the juice out like you would wring the water out of something.
After that just mix everything together, and put in to jars and keep in fridge. It keeps for along time.
Makes about 2 quarts

Dixie - that sounds interesting. I make refrigerator pickles by the gallon besides fresh salad and we go through alot that way. When i was gone for the two weeks ron ate the whole gallon of pickles I made the day before I left - 1 I could not believe it when he called me and said it was gone. The second gallon is about empty and i just did another yesterday.

Maybe you could give me your recipe for the fridge pickles. They must be very good for Ron to eat a whole gallon while you were away.
This recipe is very good if you like cucumber dressing. Everyone that I have served it to wants the recipe to take home.

Dix, I tried again with that video and can't get it to load. You know I really haven't noticed honeybees too much, and I tend to agree that they are getting a little sparse it seems.

by the way, I wished I had planted a garden this year. I'm going to next year, so I'll get hollering at everybody for advice on when to put stuff out.
